Kapa-karaginaza (EC 3.2.1.83, kapa-karaginan 4-beta-D-glikanohidrolaza) je enzim sa sistematskim imenom kapa-karaginan 4-beta-D-glikanohidrolaza (zadržavanje konfiguracije).[1][2][3][4][5] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Endohidroliza (1->4)-beta-D-veza između D-galaktoza 4-sulfata i 3,6-anhidro-D-galaktoze u kapa-karagenanima
Glavni produkti hidrolize su neokarabioza-sulfat i neokaratetraoza-sulfat.
